Three Healthy Asian Inspired Meals

Most of us get bored of our usual lunch boxes from time to time… and actually, now is the time to be healthier. The standard protein, rice and veg or cheese sandwich is no longer cutting it! Let us spice up your meal prep with 3 fresh, delicious and healthy Asian inspired meals. These make a delicious alternative to the soggy sarnie and are a lovely healthy treat (no really they are). We have used classic lunch time staples –

wrap, soup and protein box – and infused them with our authentic Indian curry flavours.


Without further ado, here is our guide to your healthy, Asian inspired meal prep! Lunchtime has never felt more exciting.


Creamy Butternut Squash Korma soup

Who doesn’t love to warm up with a delicious soup? Butternut squash is bursting with

vitamins A, C and E and it adds a lovely, sweet flavour to this dish.

Desi Tikka Currykit Tofu and Lentil Salad


You can add some yoghurt and even a bit of silken tofu for the extra creaminess and protein. Our Korma currykit gives the traditional butternut squash soup a bit of spice that pairs so well with the sweet and creamy elements of this recipe! For 3-4 servings, you will need:

  • Desi Korma Healthy Currykit

  • 1 large butternut squash, peeled and diced

  • 250g Greek yoghurt

  • Water

  • Cashews for a bit of crunch

And that’s it!


To make this soup, simply roast your peeled and diced squash in the oven with

a bit of salt, pepper and oil at 200 degrees for around 30 minutes. In the meantime, prep

your spices according to the instructions on the packet. Let the squash cool if your blender

can’t handle hot foods.


Add the squash, spices, yoghurt and water to the blender, depending on how thick or runny you’d like your soup. Blend, reheat if necessary, top with some cashews and enjoy!


Bhuna chicken wraps


If you’re sick of the usual chicken salad sandwiches, this tasty wrap is for you! We used our

Bhuna spices to flavour the chicken (or veggie alternative). Coupled with tangy mango

chutney, this wrap is bursting full of flavour in every bite. To make 4 wraps, you will need:

  • Desi Bhuna Curry Kit

  • 300g chicken (or veggie alternative)

  • Rainbow slaw

  • Spinach or any other greens

  • Mayo

  • Tortilla wraps

To start, simply follow the instructions on our curry kits and fry the chicken in the spices for

as long as you need, depending on whether it’s a veggie version or not. Once that’s done,

assemble your wrap! Spread some mayo on the tortilla, top with veggies, the Desi Bhuna

chicken and mango chutney. These wraps are also great if you have some left-over curry to use up. You can wrap them in foil, which can be reused and store them in the fridge for up

to 4 days. Perfect for grabbing a quick, healthy Asian inspired meal on the go.


Tikka Tofu and Lentil Bowl with Raita Dressing

This recipe is a nutritional powerhouse! High in protein, fibre and nutrients from veggies,

lentils and the yoghurt raita dip, it is fresh and full of flavour, leaving you energised for the

rest of the day.


Here’s what you’ll need for 4 lunch boxes:

  • Desi Tikka Curry Kit

  • Cornflour

  • 450g firm tofu

  • Cucumbers and tomatoes

  • 500g puy lentils

  • 250g Greek yoghurt or vegan alternative

  • Garlic (for the Raita)

  • Ginger (for the Raita)

  • Juice of half a lime

  • Fresh mint and coriander

We recommend dipping your tofu in cornflour and frying it in a bit of oil until golden brown. This will provide it with a crispy coating before you add the spices, however, you can also

skip this step.

Next, add your sauted onion, garlic and ginger paste to the

pan according to the instructions on the pack. Cook them thoroughly according to the instructions. Coat the tofu in the Tikka spice pack before adding it to the pan. Add the remaining spices to the sauted onion, garlic and ginger paste mix and cook through.


To assemble your lunchbox, chop up cucumber and tomatoes and mix it with cooked puy

lentils.

Dressing

For the raita yoghurt dressing, mix the yoghurt, lime juice, garlic, ginger and fresh

herbs to taste. You’re good to go – assemble your lunch box and enjoy these healthy meals

for the rest of the week!
